Low Carb Chicken Tenders

This is a quick an easy recipe for Low Carb Chicken Tenders that your family will love. It uses coconut flakes to give it a crispy crunch!

Who else has picky kids? or maybe you even like a great chicken tender every now and then for dinner!

My two girls (5 and 3) have reached their picky eating stage, and it makes it so difficult when you want to cook for the family. I wanted to try a recipe that was a healthier version of something I know they will eat: Chicken Tenders!

What I like about these is they are baked and not fried – plus you can even change up the seasoning to fit what your tastes are! I like to add a little onion powder and mustard powder to mine, but I’m sharing just the basic recipe so you can change it up to fit your favorite flavors. They are so easy to make too!! Seriously a 30 minute meal, so that’s great for busy moms who are going back to school and dealing with a crazy schedule again.

Easy Low Carb Chicken Tenders! 

We are cooking up some #lowcarb #paleo #glutenfree Chicken Tenders tonight!!

1/4 cup of coconut flour
1/2 teaspoon of salt
1/8 teaspoon of pepper
2 eggs beaten
1/2 cup of unsweetened shredded coconut

Bake at 375 degrees for 8 minutes then flip and bake another 8 minutes.

Easy Low Carb Chicken Tenders

Cook Time 16 minutes
Course Lunch or Dinner

Ingredients
  

  • 1/4 cup of coconut flour
  • 1/2 teaspoon of salt
  • 1/8 teaspoon of pepper
  • 2 eggs beaten
  • 1/2 cup of unsweetened shredded coconut
  • 3 lbs chicken tenders

Instructions
 

  • Whisk together your eggs in one bowl.
  • Add the other ingredients except the chicken to another bowl.
  • Dip your chicken tenders in the egg.
  • Then immediately dip them in the dry mixture to coat the chicken tenders on both sides.
  • Place the chicken tenders on an oiled baking sheet.
  • Bake at 375 degrees for 8 minutes then flip and bake another 8 minutes.
