Oh my goodness. I can’t believe this was low carb. Even better, it took less than an hour to prepare and could be done completely in my Instant Pot!

I’m always looking for a quick and easy meal I can throw together in my Instant Pot. This ONE appliance has made it so much easier for me to cook more healthy meals at home – that tastes delicious!

What is an Instant Pot?

I don’t know about you, but I honestly don’t know how I survived before I had my own Instant Pot. This versatile kitchen appliance can cook so many different recipes in such a fast amount of time it really is incredible.

An Instant Pot is a small kitchen appliance that combines several functions into one handy device. It serves as an electric pressure cooker, slow cooker, rice cooker, steamer, sauté pan, yogurt maker, and warmer all in one. Instant Pots became so popular for their convenience, efficiency, and ability to cook meals quickly while retaining flavor and nutrients. They’ve become a staple in many kitchens (including mine!), especially for busy families looking to streamline meal preparation.

I personally cook either my Red Beans and Rice, Gumbo, chili… or just regular shredded chicken in it almost weekly. It is a well loved kitchen appliance in my home, haha!

Can I make this Instant Pot Hearty Italian Soup dairy free?

Yes! I would probably substitute a can of coconut milk in place of the heavy whipping cream and it would just just fine. Thankfully the rest of the ingredients are naturally dairy free! You can learn about more dairy free alternatives here.

How long does this recipe take to cook?

You can probably make this in just over 30 minutes. Sautéing the beef and getting it started shouldn’t take more than 15 minutes or so. Once you lock the lid on your instant pot, it will take a few minutes to comes to pressure. After it seals, it will only cook for 15 minutes. I would let it naturally release for a least 5 minutes.

Instant Pot Low Carb Hearty Italian Soup

Course Soup

Equipment

  • Instant Pot

Ingredients
  

  • * 2 lb ground beef
  • * 2 bags of frozen cauliflower florets
  • * 1 bag of frozen onion and pepper blend
  • * 4 slices cooked bacon chopped
  • * 1 tablespoon Italian seasoning
  • * 1/2 teaspoon salt
  • * 1/4 teaspoon black pepper
  • * 1/2 teaspoon red pepper flakes
  • * 2 garlic cloves minced or 1 tablespoon of minced garlic from jar
  • * 1.5 quarts of beef broth
  • * 2 teaspoons arrowroot mixed with enough water to make a paste
  • * 1 cup heavy whipping cream

Instructions
 

  • Set Instant Pot to “Sauté” cook beef in a little coconut oil.
  • Once cooked, drain excess oil.
  • Add in garlic and seasoning and sauté.
  • Add frozen vegetables and mix in.
  • Add in everything except- Reserve bacon, arrowroot and heavy whipping cream until the end.
  • Place Instant pot lid on and close valve.
  • Cook on “soup” setting for 15 minutes.
  • When ready, release steam.
  • Add arrowroot mixture and simmer for another 15 minutes.
  • Leave on “keep warm” setting and sprinkle in cooked bacon and slowly pour cream while stirring.
  • Check for taste and then serve!

      I think that would work fine! You would just need to cook it longer of course (the increased pressure helps it cook faster!)
