This healthy muffin recipe is sweetened with just bananas and a touch of honey to help preserve it. It’s great for kids and school lunches too!
HIGH PROTEIN BANANA MUFFINS (Gluten Free and Paleo)
Ingredients:
- 4 large overripe bananas about 2 cups, mashed
- 1/2 cup coconut oil
- 1/2 cup creamy almond butter
- 1 TBS organic honey
- 2 tsps vanilla extract
- 4 eggs lightly beaten
- 1/2 cup of coconut flour
- 1/2 cup almond flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp sea salt
- 1 tsp cinnamon
Directions:
- Preheat oven to 350 degrees F.
- Spray or grease muffin tins (makes about 24 muffins) Set aside.
- In a small bowl combine coconut flour, almond flour, baking powder, baking soda, salt and cinnamon).
- In a large, glass mixing bowl melt together coconut oil and almond butter (for about 1 minute on high), stir until combined.
- Add mashed banana, honey and vanilla extract and mix.
- Add eggs and stir until smooth.
- Add dry ingredients to wet ingredients and mix until completely combined.
- Pour batter into muffin tins and bake for 25-30 minutes, until top is set and a toothpick inserted in the center comes out clean.
- Let cool in the pan for 5 minutes before gently removing the muffins to a wire rack to cool.
