Thanksgiving Turkey Left-Over Soup

We all love a delicious Thanksgiving dinner, and it wouldn’t be complete without the turkey… But many of us have left overs that we aren’t sure how to eat. Here is an easy left-over turkey soup recipe perfect for the holiday left overs.

When Thanksgiving is over, and you are putting away all the left-overs… wondering what you are going to do with all the turkey???

Make a Bone Broth based soup!

Bone broth has been shown to be one of the healthiest foods we can eat. When you want to stay healthy, this meal is just what your body is craving.

I’m all about nourishing your body with food and that can start with dinner : )

The recipe is easy… but it does take some time. This is the perfect meal to start the night before to give you a stress free dinner the next day.

 

What you will need:

Crock pot and a large stock pot for the stove

One turkey carcass

water to cover bones

2 packages of frozen cut carrots

2 packages of frozen lima beans

1/2 package of frozen spinach

1 tsp of salt

1 tablespoon of Italian seasoning

1/4 tsp of red pepper flakes

1/2 tsp of garlic powder

 

Directions

In your crock pot or instant pot, (I do this the night before)

Place your turkey carcass in your crock pot and cover with water. Set heat to LOW and set for 8-10 hours (for the Crock Pot, it will be less on the instant pot obviously).

 

After 8-10 hours, strain the bones out of your broth along with the meat that has fallen off and set aside. You can keep broth in crock pot, but I moved to my larger stock pot for the stove.

Add 2 packages of carrots, 2 packages of lima beans, and 1/2 package of spinach. Plus, add the seasoning as well.

Carefully remove any meat from the bones and add to soup.

 

Let heat through 1-2 hours on low.

Enjoy your left-overs with a fresh new look.

 

My second daughter LOVES soup, and I’m so glad too!! It is easy to sneak in lots of veggies and goodness into a warm bowl of soup.

 

I love eating soup throughout the fall and winter. It is the perfect meal that brings me comfort and keeps me healthy from the inside : )
