This past year, my husband and I discovered that we both were reacting to gluten in our food. Not so much of an allergy, but definitely an intolerance. Did you know that up to 6-10% estimated people are celiacs or have a gluten allergy? Wheat products are not easy for human to digest even for the person without celiacs disease.

I love this recipe idea for easy low carb mozzarella sticks. I think that these would be perfect for a movie date at home or an extra special treat for the kid’s snack. Mozzarella sticks are a childhood favorite of mine too!
First off, I love Stacy. I can’t share the love enough. This idea is both so cute and frugal (two things that sum up Stacy in my mind too). If you are looking for a funny blog to follow full of helpful tips, recipes, and saving money tips, hers is the one to hit up. I can’t wait to try out this date night with Adam.
{Oh My!, this Southern Girl Can’t contain herself} Sara is a good blogging friend of mine. She is also a southern girl, so she knows that bread pudding runs deep in a southern girl’s cravings. First off this is low sugar and healthy. This recipe is also made in the crockpot! What more could you want in a recipe?
With Valentine’s Day approaching, I was thinking a good strawberry cake would be a good recipe to include. I found this one from Melissa at Satisfying Eats. She gave up grains and her health improved tremendously. We are basically grain free at our house. I love that this recipe is low carb and grain free – – and so pretty too.
What new things have you found this week on pinterest or other blogs you follow? Share a link in a comment for me to go check out. Maybe I’ll include it in my next Found it Friday too! read more
I had done some research and found that radishes were pretty low carb and similar in texture to potatoes. I figured I would try to turn my potato salad into a Radish “Faux-tato” Salad. Adam and I both really loved it. Adam was very skeptical at first. I had mad potato salad using red potatoes before, and it looked very similar in color. Adam said that is exceeded his expectations.read more
I fell in love with lettuce wraps not to long ago… and I am hooked. We had them first at Cheesecake Factory. They were chicken and mushroom lettuce wraps and they were amazing! I was hooked from the first bite. I knew I would need to figure out a way to make these at home, because I couldn’t afford to go to Cheesecake Factory as often as I would want to eat these Asian lettuce wraps.
Since opening my world to lettuce wraps, I have a love for all things wrapped in lettuce. I know that if you haven’t tried them yet, you may not think they could be that wonderful… but just wait til you try these!!! I am going to be working on Mexican Lettuce Wraps, Peanut Sauce Lettuce Wraps, and Cheeseburger lettuce wraps.read more

This crockpot meatball dinner is sure to be a hit at your dinner table. It is hearty and full flavored for filling your appetite. My husband said it was the perfect dinner for a winter night.
The inspiration came from the grocery store. I was shopping this past weekend and I saw these chicken and mozzarella Italian meatballs that were all natural at Krogers. They were Aidelle’s brand. I was really impressed with the ingredients and they were perfectly low carb for a satisfying dinner.
I really wanted to pair these with a creamy sauce. I wasn’t sure starting off what vegetables I wanted to match with the Italian and cheese flavors. Then it finally came to me: Spinach!read more

Management of your Sugar and Carbohydrates is crucial for weight loss and your general health.
We know sugar is so important to get under control.
A low glycemic diet in general is healthier than a diet focused on lots of carbs. When our system gets overloaded with too many sugar and carbs, our cells start storing extra carbs as fat in our cells.
Our cells love to store carbs, so they are very eager and ready when we over eat our carbs. If we eat a moderate or low carb diet, then we can burn those carbs before they get the chance to be stored as extra fat.read more
