Instant Pot Red Beans and Rice

Ingredients
  

  • 2 tablespoons avocado oil
  • 1 pound sausage sliced I like to use Kiolbassa Beef Sausage
  • 2-3 cups of frozen vegetable seasoning mix
  • 2 tablespoons garlic minced
  • 4 cups beef broth
  • 1 pound dry kidney beans rinsed
  • 2 bay leaves
  • ¼ teaspoon cayenne pepper
  • 1 teaspoon dried thyme
  • ½ teaspoon oregano
  • ½ teaspoon black pepper
  • 1 tablespoon dried parsley
  • 2 tablespoons of Tony’s Cajun seasoning
  • salt to taste

Instructions
 

  • First, set your instant pot to sauté and heat up the oil.
  • Next, add your sliced sausage and garlic just to cook through maybe 3 minutes.
  • Add Frozen vegetable seasoning blend (onions, celery, peppers) and heat through about 3 minutes.
  • Next, add the beef broth and seasoning. Stir to mix through.
  • Lastly, add your rinsed dried kidney beans.
  • Set your instant pot for manual high heat for 40 minutes.
  • Let naturally release (which takes about 15 minutes or so)
  • Remove the Bay leaves before servings
