Preheat the oven to 350 degrees F.
Combine the mozzarella and cream cheese and melt together for 1 minute in a microwave or over the stove on low heat. Stir. Heat for another 30 seconds. Stir until smooth.
Add the remaining king cake dough ingredients, incorporate as much as possible. I used a food processor and it worked great!
Roll the dough on a piece of parchment paper. Make a rectangle shape. About 12 by 16 inches.
Combine the melted butter, sugar free sweetener and cinnamon. Mix well to combine, spread onto the rectangle of dough. Roll up dough like a jelly roll. Use parchment paper to help with stickiness.
Bake 15-18 minutes. While it is baking, make the frosting.
Add the frosting ingredients into a mixer and mix until smooth.
Once king cake is out of the oven. Let Set to cool. Then, spread the frosting over the top and enjoy!
