Preheat oven to 375.
Heat large skillet.
Melt coconut oil in skillet.
Add onions, bell peppers, mushrooms, garlic, salt, pepper to the skillet
Continue to sauté until onions are translucent.
Remove veggies to a separate bowl.
Add a little oil if needed and saute beef until cooked through following directions.
Add veggies to meat in skillet and toss to mix well.
Transfer everything into a 9x13 pan.
Top with sliced provolone cheese.
Bake in oven for 10-15 minutes to melt cheese.
