Ingredients

cups
of flour
I used my gluten free flour that is made up of mostly bean flours, you could use whatever E flour you want like Oat flour

scoop of protein powder
1/2
teaspoon
of baking powder
1/2
teaspoon
of baking soda
1
teaspoon
of cinnamon
1/4
teaspoon
of salt
1/2
teaspoon
of pumpkin pie spice
1/2
cup
of egg whites
1
cup
of pumpkin canned or fresh
I used canned

cup
of applesauce
unsweetened
1/2
cup
of xylitol
or your preferred sweetener
2
teaspoons
of vanilla
Instructions
Preheat oven to 350 degrees.
In a bowl, combine wet ingredients until all mixed.
Add flours, baking powders, spices and sweeteners. I used my immersion blender to whisk everything together, you could also use a mixer or hand whisk.
After everything is combined, pour into greased muffin cups.
Bake for about 15-20 minutes or until toothpick inserted into muffin comes out clean.
Notes
My recipe made 15 medium sized muffins.
