Turkey and Mushroom Asian Lettuce Wraps

A Trim and Healthy Satisfying Asian Lettuce Wrap Recipe.

Ingredients
  

  • 1 tablespoon of coconut oil
  • 1 pound of Ground turkey
  • 1 onion
  • 1/3 cup of Tamari or soy sauce
  • 1/2 cup of chicken stock
  • 2 tablespoons of rice vinegar
  • 1/2 teaspoon of glucomannan
  • 1/2 teaspoon of ginger
  • 1 teaspoon of garlic powder
  • 1/2 teaspoon of red pepper flakes
  • 1/4 teaspoon of black pepper
  • 1/4-1/2 teaspoon of salt the soy sauce is pretty salty already
  • 1/4-1/2 teaspoon of liquid stevia drops depending on how sweet of a teryaki sauce you like you could also try Truvia, Nunaturals stevia or other sweetener
  • 1 large box of mushrooms - chopped finely
  • 1 cup of shredded carrots
  • 1 package of Hearts of Romaine lettuce

Instructions
 

  • Heat sauce pan on medium high heat.
  • Add coconut oil. Once heated, add chopped onion.
  • Once onion is cooked, add ground turkey, salt, pepper flakes, black pepper, ginger and garlic powder.
  • In a separate bowl, mix the tamari or soy sauce, broth and rice vinegar.
  • Add in the liquid stevia (or you can try a few shakes of nunaturals or Truvia powder)
  • Slowly stir in glucomannan making sure to mix in completely without forming clumps.
  • Once meat is cooked, add liquid mixture, carrots and mushrooms.
  • Let cook until carrots are tender (about 10 minutes)
  • Serve wrapped in lettuce leaves.
